Prepare all the necessary ingredients for preparing the Carbonate.
Whole spices, if you have them, grind in a mortar and mix with ground. I have whole coriander and fennel seeds, dried onions and garlic powder, sweet paprika, chili powder, salt and black pepper.
Cover the finished meat with foil and stand for 10-15 minutes if serving hot and half an hour if cold. Slice the meat across the grain and serve, garnishing according to your preference.
Dry a piece of carbonate with a napkin and grease liberally with mustard. I prefer cereal, but that's a matter of taste. Sprinkle the spice mixture on top, pressing it against the meat to form a dense layer. You can do this directly on a baking sheet
You can serve baked carbonate both hot, with a side dish and salad, and cold, as a snack or for a sandwich. Bon Appetit!
